
Bacon Wrapped Enoki
With only four ingredients needed to whip up this bacon wrapped enoki, this dish makes the perfect appetizer of tender enoki mushrooms and crispy bacon which is ready to serve up in under 30 minutes!

12 slices Bacon

Approx. 200g Enoki Mushrooms

3 Scallions

Instructions
- Preheat the oven to 425 degrees F. Line a large rimmed baking sheet with parchment paper.
- Arrange the bacon on it 3 inches apart. Set the mushrooms on the bacon slices. Top with the scallions and season with pepper. Roll up into tight cylinders and secure with toothpicks.
- Roast the enoki bundles for 18 minutes, or until the bacon is browned and crisp.
- Drain the bundles on paper towels, remove the toothpicks and serve. Enjoy!
Notes
- When wrapping the bacon around the enoki mushrooms, ensure the bacon is wrapped tightly to keep the mushrooms and scallions secure. This will not only help the bacon to cook evenly, but also infuse the mushrooms with the bacon’s savoury flavour during roasting. Additionally, when securing with toothpicks, try to pierce through the bacon and the stem of the mushrooms to keep everything in place.
- Prep ahead: Prepare the bacon-wrapped enoki bundles through step 5 the night before. This will save time on the day of cooking and allow the flavours to meld together for an even more delicious dish.
- Use kitchen shears: Instead of using a knife to cut the bacon, use kitchen shears to easily and quickly trim the bacon slices to the desired length, making the preparation process more efficient.
- Double up: Make a larger batch of the bacon-wrapped enoki bundles and freeze the extras for a quick and convenient appetizer or snack for later.
